Milk production has exceptional production and economic significance because of its purpose of population nutrition. Milk remains primarily used in the dairy industry as a raw material that is to be processed for preparing other foods. Milk production is demanding, both for the animal that provides it and for the producer. There are many factors that may affect milk production, such as agro-ecological and climatic factors, the level of economic development, traditional views, and the habit of consuming milk and dairy products. This paper's primary goal is to present the dynamics of milk production in the Republic of Croatia from 2000 to 2018, using basic statistical methods for data analysis. The paper presents the three most famous milk types: cow's, sheep's, and goat's milk. The paper analyzes the conditions in period of nineteen years in which the production of a specific type of milk increases or decreases. The analysis of milk production was conducted by using methods such as base and link relatives’ indices, geometric mean, compound annual growth rate, and regression analysis. According to the production data, collected over the course of nineteen years and taken from the Croatian Central Bureau of Statistics, cow's milk's total production amounts to 13 502 066 liters, making it the most in-demand milk. Cow’s milk is then followed by goat's milk with a production of 222 744 liters in the period from 2000 to 2018. The third most demanded milk is sheep’s milk, whose total production in the aforementioned period amounts 143 271 liters.
